Fresh smoked salmon paired with cream cheese & herbs makes the perfect light appetizer for any spring gathering! This recipe is quick & easy & sure to be a crowd pleaser. For those that want to go the extra mile, bake our famous Guinness Brown Bread. If you want to make the recipe easier, your favorite brand of cracker/flat bread will work too. For the relish:

  • 1/2 cup capers
  • 1 cup chopped tomato
  • 1/2 cup chopped shallots
  • juice of a fresh lemon
  • 1/2 cup chopped green onion
For the cream cheese:

  • your favorite brand of cream cheese
  • chopped chives
  • chopped parsley
  • chopped dill
  • splash of heavy cream
Wine pairing:
A chilled bottle of sauvignon blanc & friends & family to share with!
Directions:
Whip the cream cheese in a mixing bowl with fresh herbs & a touch of cream to give a nice spreadable texture. Cut the crust off each slice of bread & cut each slice into 2 pieces. For the relish, combine all ingredients into mixing bowl, add fresh lemon & salt & pepper. Chill before serving. Spread the cream cheese onto each slice of bread & top with a slice of smoked salmon, a teaspoon of relish & a small slice of fresh dill as a garnish!
